Greek Kebab Tzatziki Bowl
Ingredients:

  • 1 lb. lamb or chicken, (cubed)

  • 1 red onion, sliced

  • 2 bell peppers, cubed

  • 1 cup cherry tomatoes

  • 1 cup cooked rice

  • 4 pita bread rounds

For the Marinade:

  • 1/4 cup olive oil

  • 3 cloves garlic, minced

  • 1 lemon, juiced

  • 1 tsp dried oregano

  • Salt and pepper to taste

For the Tzatziki Sauce:

  • 1 cup Greek yogurt

  • 1/2 cucumber, grated and drained

  • 2 cloves garlic, minced

  • 2 tbsp fresh dill, chopped

  • 1 tbsp lemon juice

  • Salt and pepper to taste

Instructions:
1. In a bowl, combine the meat with the marinade ingredients. Cover and refrigerate for at least 1 hour.
2. Preheat the grill or grill pan over medium-high heat. Thread the marinated meat, red onion, bell peppers, and cherry tomatoes onto skewers.
3. Grill the kebabs for 10-12 minutes, turning occasionally, until the meat is cooked to your desired doneness and the vegetables are charred and tender.
4. While the kebabs are grilling, prepare the tzatziki sauce by combining the Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, salt, and pepper in a bowl.
5. Warm the pita bread rounds on the grill for 1-2 minutes per side.
