Instructions:
1. Preheat your oven to 300°F (150°C) and line a large baking sheet with parchment paper.
2. In a large bowl, mix the oats, nuts, seeds, shredded coconut, salt, and cinnamon.
3. In a small saucepan, warm the honey or maple syrup, and oil over low heat. Remove from the heat and stir in the vanilla extract.
4. Pour the liquid mixture over the dry ingredients and stir until everything is well coated.
5. Spread the mixture onto the prepared baking sheet in an even layer.
6. Bake for 30-40 minutes, stirring every 10 minutes, until the granola is golden brown.
7. Remove from the oven and let it cool. Stir in the dried fruit.
8. Once completely cooled, store the granola in an airtight container at room temperature for up to two weeks.
